their share in total consumption of spices in India would just be neglible.  Few  units  like K.M. Industries  have  become  public company.  But  still there is a vast scope  for  introducing  new technology. The product also provides excellent scope for exports provided taste, flavour aroma are consistently maintained.

     This  is  one  of the segments  where  the  contribution  of organized  sector and use of modem, sophisticated  technology  is minimum.  Household sector and small scale sector  are  producing extruded  foods, instant mixes, some ready to eat foods etc.  But their  products  lack   in  standard,  quality,  preservation  of nutritional  ingredients and sophisticated packing  or  marketing network. A large scale unit can definitely take care of all these
accepts.  The success of 'maggi' introduced by Nestle  Ltd.,  has proved  that  Indian  consumers are open to  new  products.  Even export market is very bright and still has remained  unexploited. The  total  capacity of snack and instant foods are  90  thousand tons.  The  units which have capacities are Surya  Aroils  (4,000 tons), Swiss Health Foods (2,000 tons), Parle Products Ltd. (4750 tons),  Dr. Writer's Food Products Ltd., (500 Tons) etc.          

Most  of the units have obtained licenses for items like Noodle, Macaroni, Spaghetti,  Vermicelli,  etc. The industry  requires  high  level technology upgradation and introduction of new products  prepared with  larger variety of tastes, lesser oil and fat  contents  and provides scope for unit offering such products.

     Biscuit is an any-time snack consumed by almost 90 per  cent of  the country's population. At tea-time, biscuit is a  must  in all  families.  Biscuit  is  the  main  snack  for  school  going children, the sick & the old and people on the move. However, the per  capita consumption of biscuits in India is only about 2  Kg. compared  to more than 10 Kg. in the western countries and  about 4.5 Kg. in South-East Asian countries. This shows that there is a
huge  potential for the growth of the biscuit industry.  However, with the growing demand for fast food, the growth of the  biscuit industry is stagnating. Burgers, pizzas, and ice creams are  more in demand among the youngsters than the traditional biscuits.

     The  Biscuit  mixes  are  premixed  to  obtain   significant benefits   under  certain  conditions.   The  usual  purpose of premiaing is to ensure uniform distribution of ingredients  which are  to  bed added in very small amounts. Low protein content wheat flour,  Sugar and other ingredients are taken into a  dough mixture dough mixer.  Dough mixer is used for fermented and short types of biscuits.  Salt Sugar colors and flavors etc.are added after dissolution in water.
     In  the  mixer,  they are mixed and  kneaded  to  stiff  and pliable dough,  Ammonium bicarbonate or baking powder is added at this stage.  shortening is added when mixing is almost  complete. Mixing  time  depends upon the quality of biscuit to  be  manufac
used.
