Confectionery or sweetmeats are preserved edible delicacies consisting of a solid or crystalline phase and a liquid or non-crystalline phase the relative proportion of which determine the type of confectionery. The principal types of confectionery are hand boiled goods, caramel and toffee, ratin goods, comfits or draggees, and lozenges. Sugar is the principal ingredient of confectionery. There are about 50 important confectionery factories in the country. Mainly in U.P. Bihar, Mumbai, Punjab, and Bengal. In addition , a large number of small concerns are producing sugar confectionery with indigenous equipments. It is difficult to estimate the total output of the sugar confectionery manufactured in the country as a large proportion of its produced by small concerns. It was, however, estimated that in the early fifties, the out but of confectionery was about 12,000MT. which is now approaching to about a lac ton. The toffee and candy are used after meal, dinners as smooth refresher. It drives away bad smell from mouth and refresh the breath. Some times it causes good sensation while chewing. It is chewed by children, young people, young girls, young ladies etc. But mostly it is consumed by children of age group below ten. The chewing gum is a confectionery product specially a type of candy. It is very famous among the young guys. All of the younger uses it for chewing, for smiling face and well out look. While it uses through out India whether city or village but most of its consumption is in a city and towns.
