Man has been making alcoholic drinks for a very long time. The term `alcohol' was first applied to the spirits of wine, ethyl alcohol, and now it refers to a series of substances with similar characteristics. Ethyl alcohol is the active constituent of all introcating liquore obtained by the fermentation of saccharine materials. It is present in the form of esters in several volatile oils, Ethyl alcohol has been described as one of the most enotic synthetic oxygen containing organic chemicals because of its unique combinations of properties as a solvent a germicide, a beverage, an antifreeze, a fuel a depressant, and especially because of its versatility as chemical intermediate for other organic chemicals. Alcohol has assumed very important place in the Country's economy. It is a vital raw material for a number of chemicals and become the source of large amount of revenue for government as Excise Duty. In  India about 350 distillery units of 4.0 billion litres & 100 distillery units of 1.8 billion litres are molasses & grain based respectively. Typical Indian heavy massecuites byproduct of Sugar industries is being used as raw material in molasses based distilleries. Potatoes,  Rice, Maize, Malt, Wheat, Barley, Sugarcane & Sugar beet are various raw materials uses in based distilleries.
