India is predominantly an agricultural country. Due to the progressive increase in farm produce, a need has been felt to develop  more agro/based food  processing industries to make gainful utilisation of the raw material resources and to provide remunderative  prices to the growers. Maize is one of the important commercial food grains grown abundantly in our country. Main maize growing  States in the  country are Punjab, Haryana, U.P., M.P., Bihar, Karnataka, Rajasthan. The maize  is processed  for manufacturing many foods items, corn oil  (Maize Oil)  is one of them. Vegetable oils are obtained as a tree crop of  from the seed of annually grown crops. They include  most  of the fatty-acids esters of  glycerol, commonly  called triglycerides,  which  provide  the world with its supplies  of edible  oils  and  fats. The designations fat  and  oil  commonly distinguish  substances that are, respectively, solid and  liquid at ambient temperature. Vegetables oils have a long history  of  use  in  human nutrition, but they were also extensively used as  illuminates and lubricants  and  for soap making  in ancient civilizations. The advent of large-scale exploitation of  mineral oils in the nineteenth  century rapidly reduced the  role of vegetable oil in illumination and  lubricants and for soap making in ancient civilization. Lubrication, and the introduction of synthetic detergents shortly before World War II had a similar though less severe effect on the quantities of vegetable oils and fats used for soap/making. Until the middle of the last century, vegetable oils were recovered by mechanical or hydraulic pressing a technique believed to have been in use in  Asia at four thousand years ago.
